Is there a software or anything else where you could remove a certain instrument sound from a song and replace it with you playing that instrument instead while the rest of the instruments play?

The anything else solution is go to Custom Backing Track They have lots of tunes, and for $3US you can purchase and download the tracks with ANY instruments or vocals muted.
There’s both a software solution and an “anything else” solution. There are apps called stem rippers that use AI and advanced spectral analysis to isolate instrumental tracks in songs. RipX is one such desktop app. For iOS, there’s an app named Moises (I think) which can do the same on an iPad or iPhone.
